College friends meeting almost 20 years after college! Having spent 3 years of our undergrad lives together, we have never been this close, recollecting memories and cherishing those times that passed in a jiffy!

1 carrot- diced to cubes
quarter size onion- finely diced
1-2 garlic pods- grated or crushed

In a saucepan, add 1tsp oil- Add tge onion, ginger, garlic and saute lightly till onions are golden. Add the rest of the veggies and saute. Add little turmeric, chilli powder, cumin, coriander and garam masala. Add little salt to taste.
I also used crushed kasuri kathi to enhance the flavor.
Cool the veggies and blend well. Add 3-4 Tbsp quick oats while blending to make it into a dough consistency.
Boil potatoes with corn and quinoa separately. Mash with potato masher. Add salt to taste. Mix with the blended veggies. Add some rice flour to the mixture to act as binder.
Make into patties and toast it on both sides. Serve with lettuce, tomatoes and cucumber on your favorite bun/bread with a side of fresh cut fries.
The rest can be freezed for later use. I was able to make a total of 8 burger patties.
HOMEMADE IMMUNITY BOOSTER:
Recipe by my sister Smt. Shanthi Chandramouli.
400 gms of grated jaggery. 500 gms of peeled ginger. Cut the ginger into small pieces and put it in a cooker alongwith 18 to 20 seedless dates, two inches cinnamon piece (don't add a thick stick), 4 cloves, 18 to 20 badam, 50 gms of gasagasa (poppy seeds), 5 black pepper, one tsp jeera, 1/2 tsp dhaniya ,one nutmeg or if powder 1/2 tsp. Add little water to submerge the contents, Close the lid and wait for 4-5 whistles. After it cools, filter and blend the ingredients to smooth paste in a mixer. Add little water if necessary.
Add water to the grated jaggery along with 2-3 crushed cardamom pods. Boil to melt the jaggery. Strain the liquid into another container and boil till you get kambi paggu(1 string pull). Add the paste to the caramelized jaggery along with 20 raisins and keep stirring. In between keep adding two spoons of ghee till it gets a nice sheen. It will form a round ball and not stick to the vessel. Just taste and if required add ghee.
Otherwise let it cool and keep it in a glass container. Stores well in refrigerator. Just take a small ball of it once a day preferably in the morning
Its good for common cold or cough and a remedy for Corona

The Grass Elephant
The Grass Elephant with Golden Blades
Watercolors and Gold Flakes on handmade paper
The grass Elephant although seem unusual yet establish connection.
“It is the grass of the field, most frail of all things, that supports all life all the time!”.
The green Elephant in my artwork is a wise spirit, with exemplifying power and strength. It represents a new, improved, and positive nature that reconnects us with our own perspectives, past, and future.
With the golden tusks, we now have the opportunity to plow through our challenges, resolve our questions, celebrate our being, and journey our path to ‘home’!
These times (COVID-19 pandemic) are sure not easy but have amazingly strengthened us to focus, protect, and recognize the power of love and contentedness.

Back to Clay pot
Some notes:
- Curing the clay pot before cooking is very important
- Low flame doesn’t mean slow cooking! My dish was quicker than I thought!
- Pots turn black or darker at the bottom and is ok
- Hand washing the pot is important. I use baking soda or powder. No soap
- My pot has handles, it was ok to hold bare hands while cooking
- Use only silicon or wooden ladles
- Friend mentioned, do not use clay pots for deep frying
